It is hard to advise without any idea how you want to use the storage. There are any number of options, but with all those disks, and presumably no hardware RAID, I'd be prone to set up a RAID array with some redundancy - such as RAID 5, 6, etc.. See the Wiki for background:

Setup a Software RAID on CentOS 5
Convert a CentOS System to RAID 1
Install on Partitionable RAID1

After some consideration of the possibilities please ask a smart question.
