ext4 does fsck a lot faster for larger volumes...I have converted a few of my older servers to ext4 just because of that.
The conversion is pretty simple. does not affect the data (still recommend a backup, though).

FWIW this is a link to upstream bugzilla. It seems unlikely it will be fixed before 7.3, but there are test RPMS available.

I use heartbeat. It's officially not available for C7, but it works when compiled from source (and has a proper systemd startup script as well). It's infinitely simpler than corosync/pacemaker and it works fine for simple active/passive setups.

Create 2 new partitions in the free space on each of the disks. After reboot, 2 new devices will be visible (/dev/sda6 and /dev/sdb6, I presume), use that to create new raid device: mdadm -Cv /dev/mdXX -l1 -n2 /dev/sda6 /dev/sdb6 (replace XX with next free md number). You need root (ldap) login for ldapsearch to show all data if you have protected fields (like passwords - which you should). Slapcat will make complete dump without any password needed.
