Not familiar with Plesk but: 1. In linux it might be under /var/log/. 2. Probably not without bringing down the server. I would boot from CD ,run systemrescuecd and resize with gparted. I use a 16 GB RAM 4 TB local disk centos 5.5 KVM server and couldn't be happier with the performance. It does take some getting used to but so does vspere. Amanda will do all this and more. It is well documented.
It is made to do data backups/restore(backing up a file share,sql,etc.), not machine cloning(ghosting). It is open source.

If you need a "Remote Desktop" to your Centos VM then you would need to setup VNC server (other previous reply) or freenx http://wiki.centos.org/HowTos/FreeNX.
An NX server will give your a similar experience to an RDP session in Windows. And it run secure over port 22.
