The Live images have had issues in UEFI mode ..

I would suggest using the DVD image instead. No, the Live image does not have anything special that would make it better in your use case.

This happens when you copy the files individually from a mounted .iso to the USB stick.

Don't do that, but instead, dd the .iso image to the USB stick. See the link posted by TrevorH for details.

Looks like you don't have all the dependencies in your local repo. Perhaps your file system is read-only? This can happen if the kernel detects an error, in which case the filesystem is mounted read-only as a precaution. See findmnt --target /home and search for ro (read only) or rw (read-write, which is normal).

If your server is accessible from Internet, you could also test it with SSL Server Test.

Sometimes you need to add an intermediate certificate to the server's certificate path. Your CA should have these intermediate certificates publicly available.

Yes, UEFI vs BIOS does look different, but that should not matter. The command line editing functionality is present in both.
