If you downloaded CentOS-7-x86_64-Minimal-1810.iso, that is just that, minimal. If you want to install the needed packages for a GUI, you can do so with yum groupinstall "GNOME Desktop" . I'm not convinced that you have fixed the I/O errors. If your hard disk is acting up, you do not want to "yum update" because I/O errors in the middle of an update could cause even more problems. See if tail -100 /var/log/messages or dmesg have any mentions of those I/O errors, perhaps related to "s...

What kind of I/O problems? If your hard disk is dying, you should do a backup of all your important data (if you still can) and replace the disk.
