Do your virsh attach-disk commands but use --config to affect the xml it uses to start it up next time. Or use virsh edit to edit the xml and add the disks there. Thanks Jamie,

so in effect i'd end up doubling the amount the resources needed - in which case it might be better to run the host with a gui and install anything I needed the gui for on the host :/

I've found quite a lot online is more 'how to acheive xxxx' and rather than explaining what every command is doing the authors seem to expect people to just paste the commands in. You have to remember most tools will have a great manual, and I've quickly gotten used to using the man command as well....
