The LVM abstraction layer is already present just by using LVM. You might as well use its features if you're going to use it at all ;-)
The future appears to be RHEL or Debian. I think I'm going Debian.
Info for USB installs on http://wiki.centos.org/HowTos/InstallFromUSBkey
CentOS 5 and 6 are deadest, do not use them.

No it won't in fact (depending over numerous other factors), it may increase performance!
