[SOLVED] How to install as server vice desktop

CentOS noob, Debian user for years. Trying to install CentOS 6.5 in a VM (requirement for the new job) as a server, but I keep ending up with a desktop. I've done the obvious google searches, etc, looked through this:

and several others like it. I've tried with the live image, the minimal iso, the DVD iso, I never see the screen that asks what kind of machine I want, it always shoots straight from partitioning to installing.

I am willing to bet I'm missing something obvious, but have been unable to figure out what it is. Any help would be greatly appreciated.

The GUI installer will not run if there is not enough RAM allocated to the VM. It requires a minimum of ~650MB.

If you are using VMWare then their "Easy install" passes a kickstart across to the VM and that decides for you what partitioning and what packages should be installed. Easy way out of that: don't use the "Easy" option.
The future appears to be RHEL or Debian. I think I'm going Debian.
Info for USB installs on http://wiki.centos.org/HowTos/InstallFromUSBkey
CentOS 5 and 6 are deadest, do not use them.
