Swap out CPU

If I just swap out my CPU while mainting everything else will I need to reinstall centos not too much of an issue if I have to but would be nice if I didn't need to

You won't need to do anything.
The future appears to be RHEL or Debian. I think I'm going Debian.
Info for USB installs on http://wiki.centos.org/HowTos/InstallFromUSBkey
CentOS 5 and 6 are deadest, do not use them.
