I have install OpenOffice with yum, but it does not appear in any of my menu.
Anyone can help me to configure this ? (i installed Centos 6 with the live CD)
How can i configure my menus the way it is done in Fedora ?

not finding applications after install is indeed very annoying.
what's the output of
$ rpm -qa *writer
on my machine - I have libreoffice installed - that would be
[james@james bin]$ rpm -qa *writer
libobasis3.3-en-US-writer-3.3.3-301.i586
libreoffice3-writer-3.3.3-301.i586
libobasis3.3-nl-writer-3.3.3-301.i586
libobasis3.3-writer-3.3.3-301.i586

Try installing alacarte. It should plug itself in as System; Preferences; Main Menu. It is a simple to use gui.
