While every time doing an server maintenance team is reporting an security updates take more time on it , Can anyone describe the security update logs where we might be cross verify to confirm on it. ( Which path to check the security updates ) , Since system will report whatever we do the changes right.

There is no ability to only do security updates on CentOS. It's yum update or stay backlevel - you cannot cherry pick security updates only.
The future appears to be RHEL or Debian. I think I'm going Debian.

CentOS 5 and 6 are deadest, do not use them.
