NAT Setup Problems

I’m trying to get a NAT, and having trouble. I read through "8.5. FORWARD and NAT Rules" of the "Red Hat Enterprise Linux 5.0.0, Red Hat Enterprise Linux Deployment Guide" assuming it would apply, but seem to be stuck.

It doesn't seem to work unless I have the real external IP in cat /etc/sysconfig/networking/devices/ifcfg-eth1 as "GATEWAY=xx.xx.xx.xx" but, that ip (xx.xx.xx.xx) is dynamic. So, if/when that changes, is there something I can do so I don't have to edit the GATEWAY line every time?
