Setting Up e-mail for internal use

Hi,

I need to set up a mail server on a Centos 4.8 server. The e-mail is only for internal use and is intended for Samba Server users using Outlook Express to send e-mails to INTERNAL users only.

Some research on the net suggests the use of Postfix and Dovecot and I would be grateful if someone could point me in the right direction.

Also could you confirm what the hostname of the server (which is the centos server) can be and what the hostnames in the configuration files of both postfix and dovecot need to be.
