Because you get tired of:

1) installing 20 updates every other day on more than 10 systems,
2) clean installing a new version every 6-9 months,
3) breaking the system at least once per release version
4)... (add your favorite reason here)

...but you will find that most of us run both CentOS and Fedora, if only to see what will be coming to CentOS in the future. What I learned about FC3 has always been very useful when administering CentOS4 and knowledge about FC5/6 should be very useful when RHEL5/CentOS5 are released.

Also fedora legacy just died. So if you don't stay current with Fedora (and break everything all the time) you won't be getting security updates for long.

I considered Fedora for about 10 min, glad I went with CentOS.
