Check how you created the USB stick. Many (mainly windows based) tools try to be clever and rewrite the iso as they copy it and they fail. Best tool to use is dd but you can find a list of things known to work on http://wiki.centos.org/HowTos/InstallFromUSBkey
The future appears to be RHEL or Debian. I think I'm going Debian.

CentOS 5 and 6 are deadest, do not use them.

unetbootin is on our broken list. Do macs have dd?

I have no clue about macs, but are you sure it's /dev/disk2s?
Some googling suggests it may be /dev/disk2.

As an alternative to unetbootin (which is broken) or using dd and picking the correct disk, try Etcher.

You can download versions for macOS (aka Mac OS X), Windows (both x86 & x64, installers or portable) or Linux (32- & 64-bit).

Does a bang-up job and is free.

Cheers,
Jon
