Installation error; how do I troubleshoot this?

Here's what I'm working on:
Fujitsu Lifebook T937
Intel Core i5-7360U
20GB ram
512GB Intel 600p SSD

Here's what I'm looking at:

The real problem: I'm new to Linux in general. Aside from briefly running Mint on this machine (long enough to know I don't like it) I have no idea what I'm doing. What can I do to help myself? I'd rather learn something than just file a bug report. Is it possible to dump this to a Thumbdrive so I can figure out what's up? Ethernet does work so uploading a dump is an option.

Before trying to troubleshoot this, I would consider:
- Use minimal installation and stick to defaults as much as possible. Don't plug in any other hardware components.
- Does the live DVD work?
- Hardware looks pretty recent. Could be that there are compatibility issues with this hardware and the latest CentOS7 release. Does perhaps the latest Fedora release (which uses a more recent kernel) work? If "yes", that could be an indication of a hardware compatibility issue.

It might also help to see the bottom of the stacktrace (you posted the top of it with the least useful info in it).

That worked! No GUI though so I'm not sure what to do with it now.

Perhaps I spoke too soon. This is what a reboot got me:

Don't use xfs on nvme drives at the present time.
