Dual boot with windows and 2 CentOS servers advisable ?

DUe to an oversight while trying to install a NAS (OMV to be particular) without knowing it doesnt do dual boot it managed to delete my whole harddrive while installing so i lost my windows, centos and all my files so I am thinking about doing a Windows dual boot with x2 centos installations and was wondering if that was a wise decision.

Windows will be for misc.
First CentOS I hope to convert it to a sort of NAS using Samba so I can stream and backup photos, videos, audio and other files.
Second CentOS will be a test server to play around with. both CentOS installations I will be doing without GUI and wanted the community's output if that would be a smart idea or maybe I should install Ubuntu with Samba because CentOs is what I am trying to master atm. I am also open to other suggestions on which OS would compliment a mini file server and the preferred file system ZFS/Btrfs/EXT4 etc.

All said OS will be installed on a single harddrive, with the possibility of adding more harddisks in the near future.
