I have attempted to download "CentOS 7 Everything" on my macbook pro but when I try to open it I get the error: "CentOS-7-x86-64-Eve... no mountable file systems".
Does anyone know what this means and how I can fix this error?

"Try to open" .. how? Don't try to open it from within Mac OS, it is unlikely to work. Try booting your Mac with it.

And you almost certainly wasted 4GB of download by getting the Everything DVD as the ordinary DVD contains everything that can be selected from the GUI installer. The Everything DVD is meant for sysadmins who are creating a local mirror.
The future appears to be RHEL or Debian. I think I'm going Debian.

TrevorH, I know the difference between DVD and EverythingDVD is well explained in the release notes but it is not obvious for novice users on the download page of CentOS. May be adding the line "If you are unsure which image to use, pick the DVD image." above the download buttons would be useful for these users.
