How can I set up the CentOS ISO/installer with a newer linux kernel?

Not in any way that is easy.

What's the real problem?
The future appears to be RHEL or Debian. I think I'm going Debian.
Info for USB installs on http://wiki.centos.org/HowTos/InstallFromUSBkey
CentOS 5 and 6 are deadest, do not use them.
Use the FAQ Luke

Is it possible to mount the ISO, chroot into it, and update the kernel and install necessary drivers?

What happens when you try to use the unmodified CentOS install image? There may be kernel command line parameters that may help.
