In case that isn't clear, there is a package called yum-cron that is designed to do exactly this. You'll need to install it and edit its config file.
The future appears to be RHEL or Debian. I think I'm going Debian.

Could also write a script to do a yum check-update put the script in crontab have the output sent to a file and check that file to see what all needs to be updated

You could. You could also re-invent the wheel.
