If you've followed the instructions you referenced then you've installed the SCL version of perl, which is a parallel install and doesn't affect the system version. Whenever you want to use it you need to

And the other question is why do you think you need to update? Redhat backport security fixes to the version that ships as part of the distro. There is no need to update for security purposes.
The future appears to be RHEL or Debian. I think I'm going Debian.

CentOS 5 and 6 are deadest, do not use them.
