Using an USB stick, I boot into the device, select "Install CentOS 7" and my screen turns blue with vertical black stripes all over - this is with in UEFI mode. In BIOS mode, a short message "No controller found" appears (after also selecting the Install option) and then the screen turns black.
I cannot see any error message, except the one in BIOS mode.
Any thoughts?

Did you check that your iso image sha256sum matches the ones published in the 7.3 release notes? https://wiki.centos.org/Manuals/ReleaseNotes
Did you copy the iso image to your USB stick using one of the known to work programs for doing so? dd is recommended, other things work too, some are just plain broken. http://wiki.centos.org/HowTos/InstallFromUSBkey

The future appears to be RHEL or Debian. I think I'm going Debian.

Yes. I checked the checksum and downloaded different versions (DVD, Live and Everything). All of them froze as soon as I selected one of the options. I am using Rufus to make the USB bootable.
The funny thing is that it also happened with CentOS 6.9.
I tried to install Ubuntu and the installation happened without any problem. That's really weird.

I've seen a number of reports of problems with Rufus recently and I'd say, try using just plain `dd` to copy the iso file to the entire USB stick device and see if that helps.

I do not think this is the problem. I did the same procedure in another machine and I could boot the Live version, also install CentOS. On the R730, Red Hat 7 was also not an option either. The same problems appeared.
To be 100% sure, I tried dd and same problem. I'll stick with Ubuntu for now.
It might serve as a warning for future people trying to install CentOS in this server model.
