I'm new to Linux and trying to setup an ODBC connection between a Windows server and my CentOS 7 one.
We're using cPanel to manage the server.
What's the best method of installing either through the GUI or SSH (Putty)?

We don't support systems with cpanel installed as they change too much to be supportable here. Any advice we might give that might be applicable to a real CentOS system might break one with cpanel installed.
Having said that you'll want to install the freetds package(s) from the EPEL repo and then configure your /etc/odbc{,inst}.ini files to point to your MS SQL server.

The future appears to be RHEL or Debian. I think I'm going Debian.
