I want to build curl 7.61.1 on my centos, Do we know where I can find the SRPMS and .spec file for the same? I do see the latest version on the vault.centos.org is 7.29, which is pretty old.

Search into Fedora repo: https://dl.fedoraproject.org/pub/fedora/linux/releases/

Also, to understand why the CentOS version is as it is, please see https://access.redhat.com/security/updates/backporting/ for information on backporting of security fixes and features in CentOS and RHEL. Additionally https://access.redhat.com/solutions/2074 may also be of use.
The future appears to be RHEL or Debian. I think I'm going Debian.
