Hello,
I would like to ask if anyone of you found a link that leads to a source code of Kernel and list of packages for Centos 7? I have searched through many github repositories and none have been satisfactory. I have also stumbled upon 'https://gitlab.com/redhat/centos-stream' which helps me with Centos 8 and 9, so now only Centos 7 is remaining.

CentOS 7 source is in git.centos.org. Or alternatively you can download the SRPMs used to build from vault.centos.org.
The future appears to be RHEL or Debian. I think I'm going Debian.
