I just update my CentOS 7 with kernel.x86_64 from 3.10.0-693.21.1.el7 to 3.10.0-862.2.3.el7. My network driver kmod-forcedeth-0.64-3.el7.elrepo.x86_64.rpm doesn't work any more !

You probably disabled the ELRepo yum repo so you didn't pick up the latest kmod-forcedeth update

The future appears to be RHEL or Debian. I think I'm going Debian.

Absolutely right, I had in the past manually install kmod-forcedeth-0.64-1.el7.elrepo.x86_64.rpm

You should install their elrepo-release package so that you get future updates when they are released.
