I've used to open tigervnc towards localhost:59XY (from the CentOS 7 Desktop) and can see what I have opened from my Windows Jumpstation.
Really? Last time I used vnc, you got a new desktop for each vnc session and none of those were related to each other nor to any GUI session running on the local console. The instructions for setting it up even tell you to use a different :n (:1, :2 etc) desktop number than the one you're using locally.
The future appears to be RHEL or Debian. I think I'm going Debian.

CentOS 5 and 6 are deadest, do not use them.

You open FQDN:5999 from a windows station remotely (service ':99') and just leave it this way.
Then you login via CentOS 7 gui (same machine that is the vnc server) , then open the tigervnc client and connect on 'localhost:5999' and you can see all opened programs, shells, even a VPN session through NetworkManager is still working.
I haven't tested wether if you move the mouse from the windows and that is being visualized on the CentOS 7 (localhost:5999) vnc session.

it means that you can see what is open in a windows desktop.
But what about see what is open on a centos desktop from a windows laptop ?
Edit: I can install a virtual machine on my windows to have centos 7 if it helps.

OK, let me clarify the following:
1. VNC service listens on port 59xx, so @:1 -> 5901, @:2 -> 5902, etc
2. No matter from where you connect (windows, linux, mac) as long as you connect to same ip:port, you will connect to the same session.
3.As long as you don't restart the vnc service, you will see your gui stuff .

Just the opposite, you can see your CentOs 7 VNC session both from Windows and from the Local machine.
