Hi,

Is there a web page that lists available security patches for CentOS 7? I just want to check if I need to update my server.

# yum check-update

You can subscribe to the CentOS-Announce mailing list and be notified that way. Once subscribed you can edit your prefernces so that you receive only mails about your preferred version nad architecture. Otherwise you can see the upstream errata web pages too.
The future appears to be RHEL or Debian. I think I'm going Debian.
Info for USB installs on http://wiki.centos.org/HowTos/InstallFromUSBkey
CentOS 5 and 6 are deadest, do not use them.
