Hello guys!
I plan on installing CentOS 8 today coming from a Debian 9 environment.
What are your opinions about CentOS 8 with GNOME? Is it reliable? Would you recommend it?
Also if I want to use it as a home server, can I use CentOS 8 or should I stick with CentOS 7?

Since the only desktop in the CentOS repos is gnome, that makes the choice fairly easy! You can find (possibly incomplete) copies of KDE in various EPEL repos (you may need to enable the epel-playground repo which is even more "testing" than epel-testing). I would hope that we'll also get xfce and MATE at some point too.
The future appears to be RHEL or Debian. I think I'm going Debian.

Xfce is already available. I got it and I am very satisfied.
